You pay immediately after ordering the sandwich I am often handed my sandwich at the register while I’m still paying.

The difference is Jimmy John’s has more staff, and sandwiches are much less customized – which does cost a little more. Subway I believe is targeting low cost, which results in minimal staff and longer wait times.

Jimmy Johns and Subways are operating two entirely different customer/operating models.
